What is Lacto Fermentation?

We like to explain the process of lacto fermentation with a simple equation:

Lactobacillus + Sugar + Salt - Oxygen = Delicious Ferments!

Lactobacillus (naturally found on organically grown produce)
+  Sugar (already in fruits and veggies)
+  Salt (preservative)
-   Oxygen (anerobic environment)

=  Delicious Ferments!

lac·to·ba·cil·lus /ˌlaktōbəˈsiləs/
noun: lactobacillus; plural noun: lactobacilli  a rod-shaped bacterium that produces lactic acid from the fermentation of carbohydrates.

Lacto fermentation is an ancient art of preserving food: a controlled form of decomposition.
